About Us

From Humble Beginnings to Full-Fledged Rebellion

State Flour Bakery began with a simple idea — to rebel against mediocrity and bring Tampa handcrafted sourdough breads, croissants, and pastries made with purpose. What started as a shared vision between two friends quickly evolved into a mission: to create a bakery where craftsmanship, hospitality, and creativity take center stage every single day.


Co-owners Alex Flannery and Alex Marsilio bring over 20 years of combined experience in the hospitality and culinary industries. United by their shared love of Star Wars, they decided to blend their passion for hospitality and their bakery with the spirit of the Rebellion — creating a space that celebrates craftsmanship, creativity, and a dash of galactic inspiration. 


Chef Alex Flannery’s pastry roots trace back to the legendary Bern’s Steak House, where he worked in the renowned pastry department — learning classical techniques and precision.  His passion for refined pastry and culinary arts evolved over the years as he honed his craft across the industry, eventually taking his skills abroad as a private chef aboard luxury superyachts, traveling throughout the Caribbean, and beyond. His experience balancing artistry and execution at the highest level shaped the foundation for the bakery’s standards and creative edge. 


Alex Marsilio, a hospitality veteran with a background in food and beverage management and consulting, brings operational excellence and guest-centered leadership to the forefront. Having spent years opening and refining restaurant programs across the country, he focuses on creating an environment where quality, efficiency, and genuine hospitality work hand in hand. 


Together, the two Alexs' built State Flour Bakery from the ground up — starting in the early morning hours, baking in small batches, and selling out daily. Every croissant, loaf, and pastry reflects their commitment to quality and their refusal to compromise — a true rebellion against bad bread.


What began as a modest operation has grown into a community hub, known for its signature sourdough croissants, long-fermented breads, and ever-evolving seasonal creations.
